How to Use Your Garden Herbs and Spices with Chicken
There are many advantages to having access to an at-home herb garden. It is more affordable than purchasing these various herbs fresh or dried at the store. These herbs are also raw, which allows them to provide more flavor than those purchased dried at the store. However, many people are unsure of how to use these herbs in cooking, especially fresh herbs. These are some easy recipes that are sure to please the palates of your family and friends.
Easy Recipes for Chicken
Chicken is an ideal meat to season with garden herbs and spices. While meats are not limited to chicken, some of these easy recipes are simple enough for any family meal.
Whole Roasted Herb Chicken
This recipe makes a tender chicken, comparable to that of a store’s rotisserie chicken. This recipe calls for a whole 3-4 pound chicken, stuffing for the inside of the chicken, such as apples, onions, lemons, garlic, or carrots if you prefer, canola oil, salt and pepper, and your choice of fresh herbs, such as sage, rosemary, basil, or thyme.
First, stuff the chicken with your choice of filling. These items can be roughly chopped, as they are used as an aromatic and will not be consumed. Then, chop your garden herbs and spices and put them in a bowl. Add your salt and pepper, and about 2-3 tablespoons of canola oil. Pat your chicken dry, and rub this on the outside of the chicken.
Place the chicken in the oven at 450 degrees for approximately 1 hour to 1 hour and 15 minutes. Remove the chicken from the oven; let it set for approximately 15 minutes before serving.
Crockpot Chicken- Easy Recipe
This recipe is a change from the typical pepper-like flavors of rotisserie chicken. It calls for a 4-5 pound chicken, 2 tablespoons olive oil, ¼ cup Parmesan cheese, and fresh herbs including parsley, sage, rosemary, thyme, and garlic. You will need a 6 quart crock pot. First, combine all of the spices. Rub olive oil on the inside and outside of the chicken. Then, rub the cheese and herb mixture into the chicken. Rub the rest on the inside of the chicken, stuffing the left-over mixture inside. Cook this covered on low for approximately 7 to 8 hours. When done, this tender chicken will fall off the bone.
Chicken Salad with Fresh Garden Herbs
For this recipe, you can either boil down a 3 to 4 pound chicken and have chicken stock for another recipe, or save time by using 4 cups of cooked rotisserie chicken. If you choose to make chicken specifically for this recipe, place the chicken in a stockpot, covered with water. Bring it to a boil and then reduce heat and simmer for approximately 50 minutes. Drain the broth, and cool the chicken completely. Then remove the skin, bone, and fat from the chicken and chop the chicken into bite-size pieces. This recipe calls for ¼ cup fresh chives, 3 tablespoons white wine vinegar, 2 tablespoons capers, 2 teaspoons thyme, 1 teaspoon oregano, 4 tablespoons extra-virgin olive oil, 1 minced garlic clove, and salt and pepper to taste. Chop all of your fresh herbs, and add all of the ingredients except the chicken to a bowl and stir. Once the chicken has cooled, add it to the mixture and thoroughly coat the pieces.
