Easy Salmon Recipes

Grilled Salmon with Herb Crust Recipeeasy recipes

This salmon recipe leaves a crispy crust of fresh garden herbs. It calls for:

  • four 6-ounce salmon steaks
  • 2/3 cup of fresh oregano
  • 2/3 cup of fresh cilantro
  • 2 garlic cloves
  • ½ cup green onion
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons oil
  • salt and pepper to taste

Begin by finely chopping all herbs, onion, and garlic. Put these in a bowl, and stir in the oil, lemon juice, salt, and pepper. Thickly coat the salmon with this mixture on both sides.

This salmon should be cooked uncovered on a grill at medium heat, for 6 to 8 minutes.

Roasted Herb Salmon Recipe

This roasted herb recipe strays away from the typical lemon and herb taste associated with salmon. This recipe calls for:

  • 4 five-ounce salmon filets
  • 1 tablespoon each of minced fresh thyme, rosemary, and oregano
  • cooking spray
  • 1 small yellow onion
  • two tomatoes, thinly sliced,
  • 2 tablespoons fresh lemon juice

First, make 3-4 slits along the top of each fillet. In a bowl, whisk mustard, lemon juice, fresh herbs, and salt and pepper together. Add salmon, and coat both sides. Then wrap the fish in plastic wrap and refrigerate for 15 minutes. Save the leftover marinade.

Coat a shallow pan with cooking spray, and arrange onion and tomato slices. Place the salmon on top, and pour the marinade over. Cook at 450 degrees for 10-15 minutes.

Easy Recipes for Beef and Pork

Pork Loin 9Herb Roasted Pork Loin

  • 1 to 1/12 pound pork loin
  • 2 cloves garlic
  • 1 tablespoon each of fresh basil, thyme, and rosemary
  • 2 tablespoons olive oil
  • salt and pepper to taste

Combine the garlic, fresh herbs, and salt and pepper in a food processor and pulse until the garlic and herbs are minced. Add 2 tablespoons of olive oil to this mixture. Cover a baking sheet with foil, and place the pork loin on this. Rub the entire surface, top and bottom, of the pork loin with the herb mixture. This should be cooked at 425 degrees for 35-40 minutes. The internal temperature should reach 145 degrees.

Rare Roast Beef with Fresh Herbs, Served with Basil Oil Recipe

  • 1 ½ pound beef eye of round roast
  • ½ cup rosemary, mint, and tarragon, finely chopped
  • 2 cups fresh basil leaves
  • ½ cup extra virgin olive oil

Coat the roast with approximately half of the herbs and spices mixture and salt and pepper, then heat 1 tablespoon of olive oil in a large skillet, and brown the roast on all sides for approximately 3 minutes.

Place the meat in an oven-safe pan, and cook about 25 minutes at 475 degrees. Wrap with foil, and let set for 20 minutes. While cooking the meat, blanch the basil in a saucepan for 15 seconds and transfer to ice water. Blend basil and add remaining olive oil and salt.

Thinly slice the roast, drizzle with basil oil. Sprinkle remaining herbs and spices on top, and enjoy!
